Green Smoothie Bowl

IMG_5298Ever feel like you just can’t catch a break from the infamous cliché – “The grass is always greener on the other side”? It certainly has become a theme in my life, when it comes to the weather and seasons! The scorching Indian summer heat is upon us and it really takes its toll on me. It’s a constant reminder of when I lived in the US, how much I hated the harsh winters and loved the mild summers. Now fast forward a few years and the seasonal tables have turned in my life. I despise the cruel Indian summers and just adore mild Indian winters.

When we moved back four years ago, I had to teach myself not to compare my life in India to my life in the US. I realized (after wallowing for a while), that comparisons prohibited me from enjoying all the wonderful things our life in India had to offer. I do have my days when I grumble more than I should, but I constantly strive to find a silver lining, to help pick myself back up.

As far as summer heat is concerned, I will never love what it does to my skin and hair. I will always struggle with sweating too much, and constantly feeling drained and listless from the heat and humidity. But after trying to look for a silver lining, I finally found an orange hue – Alphonso mangoes! Indian summers bring along Alphonso mangoes, which are my true summer solace. I was deprived of them for all the years I lived in the US, so now I find much joy in devouring them each summer.

Each summer when it’s too hot to eat heavy meals, I try to create light, cooling and refreshing recipes. I just had to create one such recipe that featured my favourite fruit. This Green Smoothie Bowl is the perfect summer bowl, that comes together in just a few minutes using delicious mangoes and a few other ingredients. I use Kefir as it’s a great probiotic for the summer, but you can use any dairy free milk. Not only does this smoothie bowl cool you down, it also helps reduce the harsh impact summer has on our skin and hair. It’s packed with Vitamin A, C, E and antioxidants, all the essentials to help you look your best during the summer.

So here’s the quick recap on summer survival. Stay indoors as much as you can, and always wear your sun block when you head out. Keep hydrating yourself. Eat as many mangoes and you can. And don’t forgot to stay cool, energized and beautiful by making and eating this Green Smoothie Bowl.

Green Smoothie Bowl Recipe
Yield: 1 cereal bowl size
Time: 10 minutes

Ingredients:
Smoothie Ingredients:
½ cup plain Kefir, chilled
1 frozen banana (See note)
½ cup mango
¼ cup baby spinach
Topping Ingredients:
1 tablespoon chia seeds
1 tablespoon sliced almonds
¼ cup pineapple, diced
¼ cup mango, diced
¼ cup pomegranate

Notes:

  • When bananas get overripe peel them a diced them and store them in freezer safe bags/containers in the freezer. Frozen bananas are great for smoothies. If you don’t have frozen bananas on hand use a few ice cubes while blending the smoothie. Ice cubes will dilute the smoothie, so you can reduce the amount of kefir.
  • You can use any toppings of your choice – fruits, nuts, seeds and granola all work well!

Method:

  1. Use a blender and blend together the kefir, frozen banana, mango and spinach. Blend till everything is well pureed together.
  2. Transfer the green smoothie to a cereal bow and top with the topping ingredients. Serve immediately.
